		<description>Now THAT is a kitchen I am envious of. My tiny New York kitchen is crying right now.

I like to cook a big batch of something on a Sunday evening that I&#039;ll eat for a number of meals during the rest of the week. Something like stew, a bean salad, or quinoa :-). So then I only spend one night doing my cooking, and just reheat leftovers or spoon out into a bowl. But I make sure to make it interesting and flavorful enough that I don&#039;t get bored of it, and then I NEVER repeat the same thing 2 weeks in a row. Your quinoa salad this week inspired me to do a couscous salad with chickpeas and beets. And it turned pink (because of the beets). Which made it even more delicious of course.</description>
