Collards and Beans with Lemon Tahini Sauce

Got 10 minutes? Then you have time to whip this up. Perfect for a weeknight dinner when you just don't want to think too hard.
Ingredient Note: Tahini is sesame seed paste, you should be able to find it at most grocery stores.
Ingredients
- 1 large onion sliced
- 5 cloves of garlic chopped in large pieces
- 1 large bunch of collard green chopped in bite size pieces, tough stems removed
- 1 can of cannellini beans
- 1/2 teaspoon of lemon zest
- a juice of 1/2 lemon
- 1/4 cup of water
- salt and pepper to taste
- 1/4 cup of chopped dill
Lemon Tahini Sauce
- 1/4 cup of plain yogurt
- 1 tablespoon of tahini
- 1/2 tablespoon of lemon zest
- a juice of 1/2 lemon
- 1 tablespoon of olive oil
- salt and pepper to taste
Directions
- In a large heavy bottom pot over medium heat sauté onion in olive oil for 4- 5 minutes until tender. Add garlic salt and pepper.
- Continue cooking onion and garlic until onion has taken on a bit of color (a very light brown) this should take about 5 minutes, be careful not to burn onions.
- Add greens and water, stir to combine and cover.
- Cook for 3-4 minutes, stirring occasionally. Most of the water should be absorbed. Remove cover and stir until this happens.
- When greens have wilted add beans, cook 2-3 minutes.
- Turn off heat, add lemon zest, lemon juice, and chopped dill.
