Kale and Brazil Nut Pesto

Use this pesto as a delicious sandwich spread, a topping for grilled fish, or toss with your favorite whole grain and veggies. Added bonus: this pesto is a wrinkle fighting machine! Eat it weekly for that youthful glow.

Ingredients

  • 1 cup of steamed kale
  • 1 cup of parsley leaves
  • 1/4 cup of brazil nuts
  • 1 small garlic clove
  • a zest of of 1 lemon
  • a juice of 1/2 lemon
  • 2 tablespoons of extra virgin olive oil
  • a pinch of salt and pepper

Directions

  1. Place all ingredients in food processor
  2. Pulse until smooth
